Wild Rice Fruit Salad

Ingredients
- 2 cups (330 g) cooked wild rice, cooled
- 1 cup (100 g) chopped celery
- 1/4 cup (35 g) golden raisins
- 1 cup (180 g) pineapple chunks, drained
- 1 cup (190 g) mandarin oranges, drained
- 1 cup (160 g) green seedless grapes
- 1 bunch scallions, sliced
- 1/2 cup (54 g) slivered almonds
Salad Dressing Options
1/2-3/4 cup (115-175 g) GFCF mayonnaise
1/2 cup (120 ml) Really Quick N Easy Raspberry
Vinaigrette (page 107)
Combine all the ingredients. Add enough dressing to moisten the salad.
VARIATION: Add 2 cups (280 g) chopped cooked chicken for a one-dish meal.
